The genesis of this recipe is layered. I got freaked out from listening to other mothers of my kids friends of all the ways they tricked their kids into eating veggies. My kids have always been good eaters, but I started looking for ways to 'sneak in the healthy.'

I used a few suggestions from a few recipes all 'claiming' "A to Z" (A for apple... Z for zucchini) and when my son learned about the merged recipes he called them "Messed Up Muffins."
